If any Cognac could be called a "one man show", Cognac Jean Fillioux is it. The entire operation is run by Pascal J. Fillioux, the great-grandson of the founder, Honoré Fillioux. Not one bottle of his Cognac is shipped without him controlling each step. Pascal is recognized for having the best "nose" in the family and takes his duty seriously. There are no characteristics matching the fullness of Grande Champagne, where aromas of vanilla, pears and cigar box intermingle in a bronze color liquid. The Cognacs from Jean Fillioux's estate are selected and kept in Limousin oak casks, where they begin to age slowly. Over the years, each one develops its own structure and suppleness, aromas and finesse, and its distinctive golden color. Each one is the fruit of subtle and marvelous transformations, fruit of the "miracle" accomplished in the darkness of the cellars.
